Seaweed in the World Food System
I will be traveling to Japan to do a case study on seaweed to understand its cultural as well as commercial impact on local and international food systems. I will be achieving this by experiencing seaweed aquaculture through harvesting, processing, marketing, and cooking varieties of species. Furthermore, I will be researching how climate change influences these underwater ecosystems and how the decline of seaweed is impacting local communities.
